Basic Cupcakes

Ingredients
  1. 200g unsalted butter, softened
  2. 1 teaspoon vanilla extract
  3. 1 cup caster sugar
  4. 3 eggs
  5. 2 1/2 cups self-raising flour, sifted
  6. 1/2 cup milk

How to

  1. Using an electric mixer, beat butter, vanilla and sugar in a small bowl until light and fluffy. Add eggs, 1 at a time, beating after each addition (mixture will separate at this stage). Transfer mixture to a large bowl. Stir in half the four. Stir in half the milk. Repeat with the remaining flour and milk until combined.
  2. Spoon into prepared pan. Bake in a preheated oven at 180 degrees for approx 15 to 18 minutes.
  3. Once cooled decorate with your choice of frosting.
