- 200g unsalted butter, softened
- 1 teaspoon vanilla extract
- 1 cup caster sugar
- 3 eggs
- 2 1/2 cups self-raising flour, sifted
- 1/2 cup milk
How to
- Using an electric mixer, beat butter, vanilla and sugar in a small bowl until light and fluffy. Add eggs, 1 at a time, beating after each addition (mixture will separate at this stage). Transfer mixture to a large bowl. Stir in half the four. Stir in half the milk. Repeat with the remaining flour and milk until combined.
- Spoon into prepared pan. Bake in a preheated oven at 180 degrees for approx 15 to 18 minutes.
- Once cooled decorate with your choice of frosting.
